Directions

  1. Preheat the oven to 350°F (175°C). Line a muffin pan with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking soda, salt, ginger, cinnamon, and cloves.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the molasses and egg, and beat until well combined.

  5. Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Remove from the oven and let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
  8. To make the cream cheese frosting, beat the softened cream cheese and butter together until smooth.
  9. Gradually add the powdered sugar, one cup at a time, beating well after each addition.
  10. Add vanilla extract and beat until the frosting is light and fluffy.
  11. Once the cupcakes are completely cooled, pipe or spread the cream cheese frosting onto the cupcakes.
