Ingredients

  • 6 large eggs
  • 6 strips of bacon
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • 1 jalapeno pepper, seeded and finely chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 6 large flour tortillas
  • Salsa, sour cream, and chopped fresh cilantro for serving

Directions

  1. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and drain on paper towels. Once cooled, crumble the bacon into small pieces.
  2. In the same skillet, sauté the diced bell peppers, onion, and jalapeno pepper until they become softened, about 5 minutes.
  3. In a bowl, whisk the eggs together with cumin, chili powder, salt, and black pepper.
  4. Push the sautéed vegetables to one side of the skillet and pour the beaten eggs into the other side. Cook the eggs, stirring occasionally, until they are scrambled and cooked through.
  5. Sprinkle the crumbled bacon and shredded cheddar cheese over the scrambled eggs. Stir to combine until the cheese is melted.
  6. Warm the flour tortillas in a microwave or a dry skillet until they are pliable.
  7. Divide the scrambled egg mixture equally among the tortillas. Fold in the sides of each tortilla and then roll up tightly to form a burrito.
  8. Serve the breakfast burritos with salsa, sour cream, and chopped fresh cilantro. Enjoy!
