Ingredients

  • 4 large sweet potatoes
  • 4 slices of bacon
  • 1/2 cup sour cream
  • 1/4 cup unsalted butter, softened
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Chopped green onions for garnish

Directions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the sweet potatoes thoroughly and prick them with a fork.
  3. Place the potatoes on a baking sheet and bake for 45-50 minutes, or until they are fork-tender.
  4. While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Transfer the bacon to a paper towel-lined plate.
  5. Once the potatoes are done, carefully slice each one in half lengthwise.
  6. Scoop out the flesh from each sweet potato half, leaving a thin layer of flesh attached to the skin.
