- 1 pound beef stew meat, cubed
- 1 tablespoon vegetable oil
- 1 yellow onion, diced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 6 cups beef broth
- 1 cup water
- 1 cup pearl barley
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Directions
- In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the beef stew meat and cook until browned on all sides. Remove the meat from the pot and set aside.
- In the same pot, add the diced onion, carrots, celery, and minced garlic. Sauté until the vegetables are softened and the onion is translucent.
