Ingredients

  • 2 medium zucchinis
  • 1 cup ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup marinara sauce
  • 1/4 cup shredded mozzarella cheese

Directions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. Slice the zucchinis lengthwise into thin strips, about 1/4 inch thick.
  3. In a bowl, combine the ricotta cheese, Parmesan cheese, basil, garlic, salt, and black pepper.
  4. Spread a spoonful of marinara sauce onto the bottom of the greased baking dish.
  5. Lay a zucchini slice flat and spread about a tablespoon of the cheese mixture evenly over it.
  6. Roll up the zucchini slice tightly and place it seam side down in the baking dish.
  7. Repeat with the remaining zucchini slices and cheese mixture.
  8. Once all the zucchini slices are rolled up, spoon the marinara sauce over the top of the roll-ups.
  9. Sprinkle the shredded mozzarella cheese on top.
  10. Cover the baking dish with foil and bake for 15 minutes.
  11. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
