Ingredients
- 1 can black beans, drained and rinsed
- 1 cup cooked quinoa
- 1/2 cup grated carrots
- 1/2 cup chopped bell peppers
- 1/2 cup chopped onions
- 1/4 cup chopped fresh cilantro
- 1/4 cup breadcrumbs
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 4 burger buns
- Toppings: lettuce, tomato, avocado, onion, vegan mayo
Directions
- In a large bowl, mash the black beans with a fork or potato masher.
- Add the cooked quinoa, grated carrots, chopped bell peppers, chopped onions, cilantro, breadcrumbs, minced garlic, cumin, paprika, salt, and pepper to the bowl. Mix well until all ingredients are combined.
- Divide the mixture into 4 equal parts and shape into patties.
