Ingredients

  • 1 can black beans, drained and rinsed
  • 1 cup cooked quinoa
  • 1/2 cup grated carrots
  • 1/2 cup chopped bell peppers
  • 1/2 cup chopped onions
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 4 burger buns
  • Toppings: lettuce, tomato, avocado, onion, vegan mayo

Directions

  1. In a large bowl, mash the black beans with a fork or potato masher.
  2. Add the cooked quinoa, grated carrots, chopped bell peppers, chopped onions, cilantro, breadcrumbs, minced garlic, cumin, paprika, salt, and pepper to the bowl. Mix well until all ingredients are combined.
  3. Divide the mixture into 4 equal parts and shape into patties.
  4. Heat a grill or a non-stick skillet over medium heat. Cook the veggie burgers for about 5-6 minutes on each side, until browned and cooked through.
  5. Toast the burger buns on the grill or in a toaster.
  6. Assemble the burgers by placing the cooked patties on the bottom halves of the buns. Top with lettuce, tomato slices, avocado slices, onion slices, and a dollop of vegan mayo. Cover with the top halves of the buns.
