  • 2 lbs beef stew meat, cubed
  • 4 cups potatoes, peeled and diced
  • 2 cups carrots, sliced
  • 1 cup green beans, trimmed and cut into bite-sized pieces

  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil

Directions

  1. In a large pot, heat the vegetable oil over medium-high heat.
  2. Add the beef stew meat and cook until browned on all sides.
  3. Remove the meat from the pot and set aside.
  4. In the same pot, add the diced onion and minced garlic. Cook until fragrant and the onion becomes translucent.
  5. Add the tomato paste, Worcestershire sauce, dried thyme, dried rosemary, salt, and black pepper. Stir to combine.
  6. Return the browned beef stew meat to the pot and mix well with the onion mixture.

  8. Reduce the heat to low, cover the pot, and simmer for 30 minutes.
  9. After 30 minutes, add the diced potatoes, sliced carrots, green beans, and corn kernels to the pot.
  10. Cover the pot again and simmer for an additional 20 minutes, or until the vegetables are tender.
  11. Adjust the seasoning with salt and pepper if needed.
