Ingredients

  • 1 package of lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 red bell pepper, diced
  • 1 zucchini, sliced
  • 1 cup mushrooms, sliced
  • 1 package of firm tofu, drained and crumbled
  • 1 can of crushed tomatoes
  • 1 can of tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups vegan mozzarella cheese
  • 1/4 cup nutritional yeast
  • Fresh basil leaves, for garnish

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until fragrant and translucent.
  4. Add the red bell pepper, zucchini, and mushrooms to the skillet. Cook for 5-7 minutes, until the vegetables are tender.
  5. Add the crumbled tofu to the skillet and mix well with the vegetables.
  6. In a separate bowl, mix together the crushed tomatoes, tomato sauce, dried oregano, dried basil, salt, and black pepper.
  7. Spread a thin layer of the tomato sauce mixture in the bottom of a baking dish.
  8. Place a layer of lasagna noodles over the sauce.
  9. Spread a layer of the tofu and vegetable mixture over the noodles.
  10. Sprinkle a layer of vegan mozzarella cheese and nutritional yeast over the tofu mixture.
  11. Repeat the layers until all the ingredients are used, ending with a layer of tomato sauce on top.
  12. Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
  13. Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  14. Garnish with fresh basil leaves before serving.
