Ingredients

  • 1 block of firm tofu, pressed and cubed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup snow peas, trimmed
  • 2 carrots, julienned
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 8 oz soba noodles, cooked according to package instructions
  • 2 tbsp tamarind paste
  • 2 tbsp soy sauce
  • 2 tbsp maple syrup
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Sesame seeds and green onions for garnish

Directions

  1. In a small bowl, mix tamarind paste, soy sauce, maple syrup, rice vinegar, sesame oil, and a splash of water to make the sauce.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add tofu cubes and cook until golden brown on all sides. Remove and set aside.
  3. In the same skillet, add more oil if needed. Stir-fry garlic, ginger, and onion until fragrant.
  4. Add bell peppers, snow peas, and carrots. Cook until vegetables are tender-crisp.
