Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 2 pounds fresh spinach, chopped
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup heavy cream
  • 1/2 cup vegetable broth
  • 1/4 cup all-purpose flour
  • 1/4 cup breadcrumbs

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic. Cook until the onion becomes translucent, about 3-4 minutes.
  3. Add the sliced mushrooms, dried thyme, salt, black pepper, and nutmeg to the skillet. Cook for another 5 minutes, until the mushrooms are tender.
  4. Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat.
  5. In a separate saucepan, combine the heavy cream, vegetable broth, and all-purpose flour. Cook over medium heat, stirring constantly, until the mixture thickens.
  6. Pour the creamy sauce over the spinach and mushroom mixture in the skillet. Stir well to combine.
  7. Transfer the mixture to a greased 9x13-inch baking dish. Spread the shredded mozzarella cheese and grated Parmesan cheese on top.
  8. Sprinkle breadcrumbs over the cheese layer for a crispy topping.
  9. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the top is golden brown.
  10. Remove from the oven and let it cool slightly before serving. Enjoy!
