Spanakopita is a traditional Greek dish made with layers of crispy phyllo pastry and a flavorful filling of spinach, feta cheese, and herbs. This recipe combines the richness of feta cheese with the freshness of spinach to create a satisfying and nutritious meal. Perfect for vegetarians and those who enjoy the Mediterranean flavors, spanakopita is a versatile dish that can be served as an appetizer, side dish, or even a main course. With this recipe, you can easily recreate the classic Greek spinach pie in your own kitchen and impress your family and friends.

Ingredients

  • 1 lb fresh spinach, chopped
  • 1 lb phyllo pastry
  • 1 cup crumbled feta cheese
  • 1/2 cup ricotta cheese
  • 4 green onions, chopped
  • 1/4 cup fresh dill, chopped
  • 3 eggs, beaten
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1/2 cup butter, melted

Directions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the chopped spinach, crumbled feta cheese, ricotta cheese, green onions, dill, beaten eggs, olive oil, salt, and pepper. Mix well to incorporate all the ingredients.
  3. Brush a baking dish with melted butter to prevent the pie from sticking.
  4. Lay a sheet of phyllo pastry in the baking dish, making sure it hangs over the edges. Brush it lightly with melted butter. Repeat this process, layering the phyllo sheets and brushing each one with melted butter.
  5. Once you have layered half of the phyllo sheets, spread the spinach mixture evenly over the pastry.
  6. Continue layering the remaining phyllo sheets on top of the spinach mixture, brushing each layer with melted butter. Make sure to fold over the overhanging edges of the phyllo to seal the pie.
  7. Brush the top layer of phyllo with melted butter.
  8. Using a sharp knife, score the top layer of phyllo into squares or diamonds.
  9. Bake the spanakopita in the preheated oven for about 45 minutes, or until golden brown and crispy.
  10. Allow the spanakopita to cool for a few minutes before serving. Cut into portions and enjoy!
