  • 2 tablespoons olive oil

  • 3 cloves garlic, minced
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cups low-sodium chicken broth
  • 1 cup diced tomatoes
  • 2 cups chopped cauliflower florets
  • 1 cup sliced carrots
  • 1 cup sliced celery
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley

Directions

  1. Set your Instant Pot to the sauté function and heat olive oil.
  2. Add diced onions and minced garlic to the pot and sauté until fragrant.
  3. Add the chicken pieces and cook until browned on all sides.
  4. Pour in the chicken broth and diced tomatoes.
  5. Add the cauliflower florets, sliced carrots, and sliced celery to the pot.
