  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped broccoli florets
  • 1/2 cup sliced mushrooms
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • Marinara sauce for serving

Directions

  1. In a large mixing bowl, combine flour, water, olive oil, dried Italian herbs, and salt. Mix until a dough forms.
  2. Transfer the dough onto a floured surface and knead for 5 minutes, until smooth and elastic.
  3. Cover the dough with a kitchen towel and let it rest for 15 minutes.
  4. In the meantime, heat olive oil in a pan over medium heat. Add zucchini, bell pepper, broccoli, mushrooms, onion, and garlic. Cook until the vegetables are tender, about 5-7 minutes.
  5. Stir in dried oregano, dried basil, salt, and pepper. Remove from heat and let the filling cool.
  6. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  7. Divide the dough into 8 equal portions. Roll out each portion into a thin circle.
  8. Spoon the vegetable filling onto each circle and roll it up tightly, sealing the edges.
  9. Place the rolls on the prepared baking sheet and brush them with olive oil.
