Ingredients

  • 2 cups butternut squash, peeled and cubed
  • 2 cups sweet potatoes, peeled and cubed
  • 2 cups Brussels sprouts, halved
  • 2 cups cauliflower florets
  • 1 cup carrots, sliced
  • 1 cup green beans, trimmed
  • 1 red onion, thinly sliced
  • 4 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup vegetable broth
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Directions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, combine the butternut squash, sweet potatoes, Brussels sprouts, cauliflower, carrots, green beans, red onion, garlic, olive oil, thyme, rosemary, paprika, salt, and pepper. Toss until all the vegetables are well coated.
  3. Transfer the vegetables to a greased baking dish and pour the vegetable broth over them.
  4. Cover the dish with aluminum foil and bake for 30 minutes.
  5. Remove the foil and sprinkle the grated Parmesan cheese on top.
  6. Bake uncovered for another 10-15 minutes or until the vegetables are tender and the cheese is melted and golden.
  7. Remove from the oven and garnish with chopped fresh parsley.
