Ingredients

  • 2 medium-sized beets
  • 2 medium-sized sweet potatoes
  • 3 medium-sized carrots
  • 2 parsnips
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegan mayonnaise
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped

Directions

  1. Preheat the air fryer to 400°F (200°C).
  2. Wash and peel the beets, sweet potatoes, carrots, and parsnips. Cut them into sticks or wedges, ensuring they are of similar size so they cook evenly.
  3. In a large bowl, toss the vegetables with olive oil, garlic powder, paprika, salt, and black pepper until well coated.
  4. Place the seasoned vegetables in a single layer in the air fryer basket, making sure not to overcrowd.
  5. Cook the vegetables in batches if necessary, air frying for about 15-20 minutes or until they turn golden brown and crispy. Shake the basket every 5 minutes for even cooking.
  6. While the vegetables are cooking, prepare the vegan aioli. In a small bowl, combine the vegan mayonnaise, lemon juice, minced garlic, and chopped parsley. Mix well until smooth and creamy.
  7. Once the vegetables are done, remove them from the air fryer and transfer to a serving dish.
  8. Serve the air-fried root vegetables hot, accompanied by the vegan aioli dip. Enjoy!
