  • 2 medium-sized sweet potatoes

  • 2 parsnips

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup vegan mayonnaise
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced

  1. Preheat the air fryer to 400°F (200°C).
