Ingredients

  • 2 chicken breasts, boneless and skinless
  • 2 tablespoons soy sauce

  • 1 tablespoon cornstarch

  • 2 tablespoons vegetable oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 1 cup broccoli florets
  • 1/2 cup cashews, toasted

Directions

  1. In a small bowl, mix together soy sauce, honey, cornstarch, and chicken broth. Set aside.
  2. Slice the chicken breasts into thin strips and season with salt and pepper.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken strips and cook until browned and cooked through, about 5 minutes. Remove from the skillet and set aside.
