These Cheesy Cauliflower Tots are a healthier alternative to traditional potato tots. Made with cauliflower, cheese, and breadcrumbs, they are crispy on the outside and tender on the inside. Ingredients

  • 1 head of cauliflower
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup plain breadcrumbs
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 large eggs, beaten

Directions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Remove the core from the cauliflower and cut it into florets. Place the florets in a food processor and pulse until they resemble rice.
  3. Transfer the cauliflower rice to a microwave-safe bowl and microwave on high for 5 minutes. Let it cool slightly, then place it in a cheesecloth or clean kitchen towel. Squeeze out as much moisture as possible.
  4. In a large bowl, combine the cauliflower rice, shredded cheddar cheese, Parmesan cheese, parsley, breadcrumbs, garlic powder, onion powder, salt, black pepper, and beaten eggs. Mix until well combined.
  5. Using your hands, shape the mixture into small tots and place them on the prepared baking sheet.
  6. Bake for 20-25 minutes, or until the tots are golden brown and crispy.
