Ingredients

  • 1 cup apple cider
  • 1 cup old-fashioned oats

  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened

Directions

  1. In a small saucepan, simmer the apple cider over medium heat until it reduces to 1/4 cup. Let it cool.
  2. In a medium bowl, whisk together oats, flour, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the egg, vanilla, and reduced apple cider until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Cover the cookie dough and refrigerate for at least 30 minutes.
