Ingredients

  • 2 large potatoes, peeled and diced
  • 2 cups fresh spinach leaves
  • 1 onion, finely chopped
  • 2 tomatoes, pureed
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

Directions

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until golden brown.
  3. Add ginger-garlic paste and sauté for a minute until the raw smell disappears.
  4. Add pureed tomatoes and cook until the oil separates from the masala.
  5. Add turmeric powder, coriander powder, and red chili powder. Mix well and cook for a minute.
  6. Add diced potatoes and cook for 5-6 minutes until they are partially cooked.
  7. Add slit green chilies and spinach leaves. Mix well.
  8. Cover the pan and cook for another 10 minutes until the potatoes are fully cooked and the spinach wilts down.
  9. Add garam masala and salt to taste. Mix well.
  10. Garnish with fresh coriander leaves.
  11. Serve hot with roti, naan, or rice.
