Ingredients

  • 1 whole duck
  • 1 cup sherry wine
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the sherry wine, soy sauce, honey, minced garlic, dried thyme, dried rosemary, salt, and pepper. Mix well.
  2. Place the duck in a large resealable plastic bag and pour the marinade over it. Seal the bag and refrigerate for at least 4 hours or overnight, turning occasionally to ensure even marinating.
  3. Preheat the oven to 350°F (175°C).
  4. Remove the duck from the marinade and discard the marinade.
  5. Place the duck on a rack in a roasting pan, breast side up.
  6. Roast the duck in the preheated oven for 1 hour, then increase the temperature to 400°F (200°C).
  7. Continue roasting for an additional 30 minutes or until the duck is golden brown and the internal temperature reaches 165°F (74°C).
  8. While the duck is roasting, prepare the sherry glaze by combining 1/4 cup of the marinade with 1/4 cup sherry wine in a small saucepan. Bring to a boil and simmer until the glaze thickens slightly.
  9. Brush the duck with the sherry glaze during the last 10 minutes of roasting.
  10. Once cooked, remove the duck from the oven and let it rest for 10 minutes before carving.
