Ingredients

  • 8 ounces pasta
  • 1 pound scallops
  • 4 ounces chorizo, diced
  • 2 cloves garlic, minced
  • 1 cup crushed tomatoes
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Directions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the chorizo and cook until crispy, about 5 minutes.
  4. Remove the chorizo from the skillet and set aside.
  5. In the same skillet, add the scallops and sear until golden brown, about 2 minutes per side. Remove from the skillet and set aside.

  10. Add the cooked chorizo and seared scallops back to the skillet. Gently stir to combine.
