Directions

  1. In a large mixing bowl, combine the flour and salt. Cut in the cold butter with a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  2. Add the ice water, one tablespoon at a time, and mix until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. In a separate mixing bowl, combine the cherries, granulated sugar, cornstarch, lemon juice, and almond extract. Mix until well combined.
  5. Roll out the refrigerated dough on a floured surface to fit a 9-inch (23 cm) pie dish. Transfer the dough to the pie dish, trimming any excess.
