This turkey medley casserole is a flavorful combination of tender turkey, mixed vegetables, creamy sauce, and crispy topping. It is a perfect way to use up leftover turkey from Thanksgiving. The casserole is warm, hearty, and sure to become a family favorite.

Ingredients

  • 2 cups cooked turkey, shredded or cut into small pieces
  • 1 can cream of mushroom soup
  • 1/2 cup milk
  • 1 cup mixed vegetables, frozen or canned
  • 1 cup cheddar cheese, shredded
  • 1/2 cup breadcrumbs
  • 1/4 cup butter, melted
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 350°F and grease a 9x13 inch baking dish.
  2. In a large mixing bowl, combine the cooked turkey, cream of mushroom soup, milk, mixed vegetables, and half of the shredded cheddar cheese. Season with salt and pepper.

  4. In a separate bowl, mix together the remaining cheddar cheese, breadcrumbs, and melted butter. Sprinkle this mixture over the turkey mixture in the baking dish.
  5. Bake in the preheated oven for 30 minutes, or until the casserole is hot and bubbly, and the topping is golden brown.
