Ingredients

  • 1 can (15.5 oz) black beans, rinsed and drained
  • 1 can (15.5 oz) kidney beans, rinsed and drained
  • 1 can (15.5 oz) cannellini beans, rinsed and drained
  • 1 small onion, finely chopped
  • 1 jalapeno pepper, seeds removed and finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Juice of 1 lime

Directions

  1. In a large bowl, combine the black beans, kidney beans, and cannellini beans.
  2. Add the chopped onion, jalapeno pepper, and minced garlic to the bowl.
  3. In a separate small bowl, mix together the sour cream, mayonnaise, cilantro, ground cumin, chili powder, salt, black pepper, and lime juice.
  4. Pour the sour cream mixture over the beans and gently toss to combine.
