Ingredients

  • 3 carrots, peeled and chopped
  • 2 parsnips, peeled and chopped
  • 2 sweet potatoes, peeled and chopped
  • 1 turnip, peeled and chopped
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Directions

  1. In a slow cooker, combine the chopped carrots, parsnips, sweet potatoes, turnip, onion, garlic, vegetable broth, dried thyme, and dried rosemary.
  2. Season with salt and pepper to taste.
  3. Cover the slow cooker and cook on low heat for 6 hours or until the vegetables are tender.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, transfer the soup to a blender and blend in batches until smooth.
  5. Return the blended soup to the slow cooker and heat on low for an additional 30 minutes.
