Ingredients

  • 4 large zucchini
  • 1 pound ground beef

  • 1 teaspoon dried basil
  • 1/2 teaspoon salt

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the zucchini in half lengthwise and scoop out the seeds and flesh, leaving a hollow shell. Reserve the flesh for later use.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, bell pepper, and carrot. Cook until the vegetables are tender, about 5 minutes.
  4. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks.
  5. Add the reserved zucchini flesh, oregano, basil, salt, and black pepper to the skillet. Stir well to combine.
