Ingredients
- 1 cup shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 1 can (15 ounces) refried beans
- 1 cup sour cream
- 1 cup chunky salsa
- 1/2 cup chopped green onions
- 1/2 cup chopped ripe olives
- 1/4 cup chopped fresh cilantro
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Tortilla chips, for serving
Directions
- Preheat your oven to 350°F (175°C).
- In a medium-sized bowl, combine the shredded Monterey Jack cheese and cheddar cheese.
- Spread the refried beans evenly in the bottom of a 9-inch (23 cm) pie dish.
- Top the beans with half of the cheese mixture, reserving the other half for later.
- In a separate bowl, mix together the sour cream, salsa, green onions, ripe olives, cilantro, ground cumin, and chili powder.
- Spread the sour cream mixture over the cheese layer in the pie dish.
- Sprinkle the reserved cheese mixture on top of the sour cream layer.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and the dip is bubbly and heated through.
- Remove from the oven and let it cool for a few minutes.
- Garnish with extra chopped green onions and cilantro, if desired.
- Serve warm with tortilla chips for dipping.
