Ingredients
- 1 cup long-grain white rice
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 clove garlic, minced
- 2 cups vegetable broth
- 1 cup diced carrots
- 1 cup frozen peas
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Directions
- In a large saucepan, heat the olive oil over medium-high heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the rice and cook for an additional 2 minutes, stirring constantly.
- Add the vegetable broth, carrots, peas, oregano, basil, salt, and pepper. Bring to a boil, reduce heat to low, and simmer, covered, for 15 minutes.
- Remove from heat and let stand for 5 minutes before serving.
