Served on slider buns with melty cheese and crunchy pickles, these Mini Sloppy Joes are perfect for parties, game nights, or as a fun and easy weeknight dinner.

Ingredients

  • 1 lb pulled pork
  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • 12 slider buns
  • 6 slices cheddar cheese
  • 12 pickle slices

Directions

  1. In a medium saucepan, combine the ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, Dijon mustard, garlic powder, paprika, and cayenne pepper. Heat over medium heat, stirring occasionally, until the sauce begins to bubble.
  2. Add the pulled pork to the saucepan and stir until the pork is well coated. Reduce the heat to low and simmer for 10-15 minutes, stirring occasionally.
  3. Preheat the oven to 350°F (175°C).
  4. Slice the slider buns in half horizontally and place the bottom halves in a baking dish.
  5. Spoon the pulled pork mixture onto the bottom halves of the buns, spreading it evenly.
  6. Place a slice of cheddar cheese on top of each pile of pulled pork.
  7. Place the baking dish in the preheated oven and bake for 5-7 minutes, or until the cheese is melted.
  8. Remove the baking dish from the oven and place a pickle slice on top of each mini Sloppy Joe.
  9. Cover each sandwich with the top half of the bun.
  10. Serve the Mini Sloppy Joes warm and enjoy!
