Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 1 can black beans, drained and rinsed
- 1 can diced green chilies
- 1 can enchilada sauce
- 2 cups shredded cheddar cheese
- 10 corn tortillas
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Directions
- Preheat oven to 350 degrees F.
- In a large skillet, cook ground beef and onion until beef is browned and onion is softened. Drain excess grease.
- Add black beans, green chilies, chili powder, cumin, salt, and pepper to the skillet. Stir to combine and simmer for 5 minutes.
- Spread a thin layer of enchilada sauce on the bottom of a 9x13 inch baking dish.

- Repeat layers with the remaining tortillas, meat mixture, cheese, and enchilada sauce.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove foil and bake for an additional 10 minutes, or until cheese is bubbly and golden brown.
