Ingredients
- 2 pounds fresh green beans, trimmed and cut into bite-sized pieces
- 2 tablespoons butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 1 can cream of mushroom soup
- 1 cup milk
- Salt and pepper to taste
- 1 cup crispy fried onions
Directions
- Preheat oven to 350°F. Grease a 9x13 inch baking dish.
- Bring a large pot of salted water to a boil. Add the green beans and cook for 5 minutes. Drain and transfer to a large bowl of ice water to stop the cooking process. Drain again and set aside.
- In a large skillet, melt the butter over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.
- Add the mushrooms and cook until they release their liquid and are browned, about 8 minutes.
- Stir in the cream of mushroom soup, milk, salt, and pepper. Cook until heated through and slightly thickened, about 5 minutes.
- Add the green beans to the skillet and toss to coat in the sauce. Transfer the mixture to the prepared baking dish.
- Bake for 25 minutes, or until the green beans are tender and the sauce is bubbly.
- Top with crispy fried onions and bake for an additional 5 minutes, until the onions are golden brown.
- Serve hot and enjoy!
