Ingredients

  • 1 lb chicken sausage, sliced
  • 1 lb potato gnocchi
  • 1 bell pepper, diced
  • 1 small red onion, diced
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • 1/4 tsp red pepper flakes
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper, to taste

Directions

  1. Heat a large skillet over medium-high heat and add the chicken sausage slices. Cook until browned and cooked through, about 5 minutes. Remove the sausage from the skillet and set aside.
  2. In the same skillet, add the diced bell pepper and onion. Cook until softened, about 5 minutes. Add the minced garlic and cook for another 1 minute.
  3. Add the halved cherry tomatoes, dried basil, dried oregano, and red pepper flakes to the skillet. Stir well to combine all the ingredients.
  4. Push the vegetable mixture to one side of the skillet and add the potato gnocchi to the empty space. Cook until the gnocchi starts to brown and crisp up, about 5 minutes.
