Ingredients

  • 2 cups cooked chicken, shredded
  • 12 corn tortillas
  • 2 cups enchilada sauce
  • 2 cups shredded cheese (cheddar or Mexican blend)

  • 1/2 cup diced bell pepper
  • 1 can (14.5 ounces) black beans, rinsed and drained
  • 1 can (4 ounces) diced green chilies
  • 1/4 cup chopped fresh cilantro

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. In a large bowl, combine the cooked chicken, diced onion, diced bell pepper, black beans, diced green chilies, chopped cilantro, chili powder, cumin, garlic powder, salt, and black pepper. Mix well.
  3. Spread 1/4 cup of enchilada sauce on the bottom of the prepared baking dish.
  4. Place 4 corn tortillas on top of the sauce, overlapping as needed to cover the entire bottom of the dish.
  5. Spread 1/3 of the chicken mixture over the tortillas, followed by 1/3 cup of enchilada sauce and 1/2 cup of shredded cheese.
  6. Repeat the layers with 4 more tortillas, another 1/3 of the chicken mixture, 1/3 cup of enchilada sauce, and 1/2 cup of shredded cheese.
  7. Top with the remaining 4 tortillas, the remaining chicken mixture, 1/3 cup of enchilada sauce, and 1 cup of shredded cheese.
  8. Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and continue to bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let it cool for a few minutes.
  11. Serve hot with your favorite toppings like sour cream, guacamole, salsa, and chopped cilantro.
