Ingredients
- 2 cups cooked chicken, shredded
- 12 corn tortillas
- 2 cups enchilada sauce
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1 can (14.5 ounces) black beans, rinsed and drained
- 1 can (4 ounces) diced green chilies
- 1/4 cup chopped fresh cilantro
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Toppings: sour cream, guacamole, salsa, chopped cilantro
Directions
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
- In a large bowl, combine the cooked chicken, diced onion, diced bell pepper, black beans, diced green chilies, chopped cilantro, chili powder, cumin, garlic powder, salt, and black pepper. Mix well.
- Spread 1/4 cup of enchilada sauce on the bottom of the prepared baking dish.
- Place 4 corn tortillas on top of the sauce, overlapping as needed to cover the entire bottom of the dish.
- Spread 1/3 of the chicken mixture over the tortillas, followed by 1/3 cup of enchilada sauce and 1/2 cup of shredded cheese.
- Repeat the layers with 4 more tortillas, another 1/3 of the chicken mixture, 1/3 cup of enchilada sauce, and 1/2 cup of shredded cheese.
- Top with the remaining 4 tortillas, the remaining chicken mixture, 1/3 cup of enchilada sauce, and 1 cup of shredded cheese.
- Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
- Remove the foil and continue to bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes.
