Ingredients
- 1 cup Arborio rice
- 1 small head of radicchio, thinly sliced
- 4 oz gorgonzola cheese, crumbled
- 1/2 cup walnuts, chopped
- 2 tbsp balsamic cream
- 4 cups vegetable or chicken broth
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1/2 cup white wine
- 2 tbsp butter
- Salt and pepper, to taste
- Fresh parsley, for garnish
Directions
- In a large skillet, heat the butter over medium heat. Add the onion and garlic and sauté until softened.
- Add the rice and cook for 1-2 minutes, stirring constantly.
- Pour in the white wine and cook until it has evaporated.
- Begin adding the broth, one ladle at a time, stirring constantly and allowing the liquid to be absorbed before adding more.
- After about 18 minutes, when the rice is nearly cooked through but still slightly firm, stir in the radicchio and cook for an additional 2-3 minutes.
- Remove the skillet from heat and stir in the gorgonzola, walnuts, and balsamic cream.
- Season with salt and pepper to taste.
- Serve the risotto hot, garnished with fresh parsley.
