Ingredients

  • 2 pounds fresh green beans, trimmed and halved
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 1 cup vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup fried onions

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Bring a large pot of salted water to a boil. Add the green beans and cook until tender-crisp, about 5 minutes. Drain and set aside.
  3. In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Add the minced garlic and sliced mushrooms and cook until the mushrooms release their liquid and start to brown, about 8 minutes.
  4. Sprinkle the flour over the mushroom mixture and stir well to combine. Cook for 1 minute to cook off the raw flour taste. Gradually whisk in the vegetable broth and then the heavy cream. Cook until the sauce thickens, about 5 minutes. Season with salt, black pepper, and nutmeg.
