Ingredients
- 6 slices of bacon, chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups of chicken broth
- 4 cups of frozen corn kernels
- 2 potatoes, diced
- 1 cup of heavy cream
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Directions
- In a large pot, cook the bacon over medium heat until crispy. Remove bacon from the pot and set aside, leaving the rendered fat in the pot.
- Add onion and garlic to the pot and sauté until softened.
- Stir in chicken broth, corn, and potatoes. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Using an immersion blender, blend the soup until creamy. Alternatively, transfer half of the soup to a blender, blend until smooth, and return to the pot.
- Stir in cream and cooked bacon. Season with salt and pepper to taste.
- Serve hot, garnished with parsley.
