Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 1 onion, finely chopped
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp butter
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tbsp all-purpose flour
  • 1 tsp dijon mustard
  • Salt and pepper, to taste
  • 1 tbsp fresh parsley, chopped
  • 12 oz egg noodles, cooked according to package instructions

Directions

  1. In a large skillet, melt the butter over medium heat. Add the onions and garlic, and sauté until fragrant and translucent.
  2. Add the mushrooms to the skillet and cook until they release their moisture and brown slightly. Remove the mushrooms from the skillet and set aside.
  3. In the same skillet, increase the heat to medium-high. Add the sliced beef and cook until browned on all sides. Season with salt and pepper to taste.
  4. Return the mushrooms to the skillet with the beef. Sprinkle the flour over the beef and mushrooms, and stir well to coat.
  5. Pour in the beef broth and bring to a simmer. Cook for 5 minutes, or until the sauce has thickened slightly.
  6. Remove the skillet from heat and stir in the sour cream and Dijon mustard. Mix well until the sauce is smooth and creamy.
  7. Serve the beef stroganoff over cooked egg noodles, garnished with fresh parsley. Enjoy!
