This Potato Hay Casserole is a twist on the classic scalloped potatoes, with added crunch from the crispy hay topping. It is a perfect side dish for a cozy family dinner or a holiday feast.

Ingredients

  • 4 medium potatoes, peeled and thinly sliced
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1/4 cup all-purpose flour
  • 1/4 cup butter
  • 1/2 cup chopped hay (or breadcrumbs)
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 375°F.
  2. In a saucepan, melt the butter over medium heat. Stir in the flour to make a roux.
  3. Gradually add the milk, stirring constantly until the mixture thickens.
  4. Layer half of the sliced potatoes in a greased casserole dish. Sprinkle with half of the cheddar cheese and pour half of the milk mixture over the potatoes. Season with salt and pepper.
  5. Repeat the layers with the remaining potatoes, cheese, and milk mixture.
  6. Top the casserole with the chopped hay or breadcrumbs.
