Ingredients

  • 8 slices rye bread
  • 1 pound corned beef, sliced
  • 8 slices Swiss cheese
  • 1 cup sauerkraut, drained
  • 1/2 cup Thousand Island dressing
  • 4 tablespoons unsalted butter, softened

Directions

  1. Spread butter on one side of each slice of rye bread.
  2. Place 4 slices of bread, buttered side down, on a griddle or in a large skillet over medium heat.
  3. Divide the corned beef equally among the 4 slices of bread.
  4. Top the corned beef with the sauerkraut and then the Swiss cheese.
  5. Spread Thousand Island dressing on the unbuttered side of the remaining 4 slices of bread.
  6. Place the remaining slices of bread, dressing side down, on top of the Swiss cheese.
  7. Press down with a spatula and cook until the bottom bread slices are golden brown, about 4-5 minutes.
  8. Flip the sandwiches over and continue cooking until the other side is golden brown and the cheese is melted, another 4-5 minutes.
  9. Remove from heat, let cool slightly, and serve warm.
