Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Directions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish.
  3. In a large skillet, cook the ground beef over medium heat until browned. Add the onion and garlic and cook until the onion is soft and translucent.
  4. Add the diced tomatoes, tomato sauce, tomato paste, dried basil, dried oregano, salt, and black pepper to the skillet. Stir well to combine.
  5. Simmer the meat sauce for about 10 minutes, then remove from heat.
  6. In a small bowl, mix together the ricotta, mozzarella, and Parmesan cheese.
  7. Fill each bell pepper with the meat sauce, and then top with the cheese mixture.
  8. Cover the baking dish with foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  10. Garnish with fresh basil leaves before serving.
