Ingredients

  • 1 lb fresh salmon fillets
  • 1/4 cup bread crumbs
  • 1/4 cup finely chopped red onion

  • 1 egg, beaten
  • 1 tablespoon Dijon mustard

  • 1/2 cup Greek yogurt

  • 1/2 teaspoon lemon zest
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper, to taste

Directions

  1. Preheat the grill to medium-high heat.
  2. Rinse the salmon fillets and pat them dry with a paper towel. Remove the skin, if desired, and cut the salmon into small pieces.
  3. In a large bowl, combine the salmon pieces, bread crumbs, red onion, garlic, fresh dill, fresh parsley, egg, Dijon mustard, lemon zest, salt, and black pepper. Mix well until all the ingredients are evenly combined.
  4. Form the salmon mixture into 4 patties, about 1/2-inch thick.
  5. Place the salmon patties on the preheated grill and cook for about 4-5 minutes per side, or until cooked through and firm.
  6. While the burgers are cooking, prepare the lemon yogurt sauce. In a small bowl, mix together the Greek yogurt, lemon juice, lemon zest, fresh dill, salt, and pepper.
  7. Once the salmon burgers are cooked, remove them from the grill and let them rest for a few minutes.
  8. Toast the burger buns on the grill, if desired.
  9. Assemble the salmon burgers by placing a lettuce leaf and tomato slice on the bottom half of each burger bun. Place a salmon patty on top, followed by a generous dollop of lemon yogurt sauce. Top with the other half of the burger bun.
