Ingredients

  • 3 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups whole milk
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 2-3 tablespoons whole milk
  • White decorating sugar
  • Black decorating gel or melted chocolate
  • Pink decorating gel or jelly beans

Directions

  1. Preheat the oven to 350°F (175°C) and grease a lamb-shaped cake pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Alternate adding the dry ingredients and the milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
  9. In the meantime, prepare the buttercream frosting by creaming together the softened butter, powdered sugar, vanilla extract, and milk. Beat until light and fluffy.
  10. Once the cake has cooled, use a serrated knife to level off any uneven parts from the top and bottom of the cake.
  11. Place the cake on a serving platter and generously frost the entire cake with the buttercream frosting.
  12. Sprinkle white decorating sugar all over the cake to create the appearance of fluffy lamb fur.
  13. Use black decorating gel or melted chocolate to draw the lamb's eyes and mouth on the cake.
  14. Use pink decorating gel or jelly beans to create the lamb's nose and ears.
  15. Decorate the serving platter with Easter-themed decorations, if desired.
  16. Refrigerate the cake for at least 1 hour before serving to allow the frosting to set.
  17. Slice and serve the adorable Easter Lamb Cake to delight your family and guests!
