This recipe takes the traditional Ukrainian beet and green cabbage rolls and adds a flavorful American twist. Filled with a savory mixture of ground beef, rice, and herbs, these rolls are baked in a tangy tomato sauce for a hearty and satisfying meal.
Ingredients
- 1 large green cabbage
- 5 medium beets, peeled and grated
- 1 lb ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- Salt and pepper to taste
- 1 can (14 oz) crushed tomatoes
- 1 cup beef broth
- 2 tbsp olive oil
Directions
- Preheat oven to 350°F.
- Bring a large pot of water to a boil. Immerse the whole cabbage in the boiling water, and cook for 5 minutes. Remove cabbage and peel off leaves one by one, cutting off the tough center ribs.
- In a large bowl, mix together grated beets, ground beef, cooked rice, onion, garlic, parsley, dill, salt, and pepper.
- Place a cabbage leaf on a flat surface. Spoon some of the beef and beet mixture onto the leaf and roll it up, tucking in the sides as you go.
- Place the rolls in a baking dish, seam side down.
- In a small saucepan, mix together crushed tomatoes, beef broth, and olive oil. Pour over the cabbage rolls.
- Cover the dish with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes, or until the rolls are cooked through.
