This recipe takes the traditional Ukrainian beet and green cabbage rolls and adds a flavorful American twist. Filled with a savory mixture of ground beef, rice, and herbs, these rolls are baked in a tangy tomato sauce for a hearty and satisfying meal.

Ingredients

  • 1 large green cabbage
  • 5 medium beets, peeled and grated
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • Salt and pepper to taste
  • 1 can (14 oz) crushed tomatoes
  • 1 cup beef broth
  • 2 tbsp olive oil

Directions

  1. Preheat oven to 350°F.
  2. Bring a large pot of water to a boil. Immerse the whole cabbage in the boiling water, and cook for 5 minutes. Remove cabbage and peel off leaves one by one, cutting off the tough center ribs.
  3. In a large bowl, mix together grated beets, ground beef, cooked rice, onion, garlic, parsley, dill, salt, and pepper.
  4. Place a cabbage leaf on a flat surface. Spoon some of the beef and beet mixture onto the leaf and roll it up, tucking in the sides as you go.
  5. Place the rolls in a baking dish, seam side down.
  6. In a small saucepan, mix together crushed tomatoes, beef broth, and olive oil. Pour over the cabbage rolls.
  7. Cover the dish with foil and bake for 45 minutes. Remove foil and bake for an additional 15 minutes, or until the rolls are cooked through.
  8. Serve hot and enjoy!
