Ingredients

  • 1 1/2 cups whole wheat flour
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 eggs
  • 1 tsp vanilla extract
  • Zest of 2 lemons
  • 1/4 cup lemon juice
  • 1 1/2 cups grated zucchini
  • 1/2 cup chopped walnuts

Directions

  1. Preheat oven to 350°F and grease a loaf pan.
  2. In a medium bowl, whisk together whole wheat flour, almond flour, baking powder, baking soda, and salt.
  3. In a separate large bowl, mix together honey, olive oil, eggs, vanilla extract, lemon zest, and lemon juice.
  4. Gradually add dry ingredients to wet ingredients and stir until just combined.
  5. Fold in grated zucchini and chopped walnuts.
  6. Pour batter into prepared loaf pan and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
