Ingredients

  • 2 delicata squash
  • 1 cup cooked quinoa
  • 1/2 cup breadcrumbs

  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 4 burger buns

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the delicata squash in half lengthwise and scoop out the seeds. Place the squash halves on a baking sheet, cut side up.
  3. Drizzle the squash halves with olive oil and sprinkle with salt and pepper. Roast in the oven for 30 minutes, or until the squash is tender.
  4. Remove the squash from the oven and let it cool slightly. Using a spoon, scoop out the flesh from the squash and transfer it to a mixing bowl.
