Ingredients

Directions

  1. In a large skillet, heat olive oil over medium heat. Add onions, garlic, bell peppers, and tomatoes. Saute for 5 minutes or until vegetables are softened.
  2. Add cumin, paprika, oregano, salt, and black pepper to the skillet. Stir well to combine all the spices with the vegetables.
  3. Lay the fish fillets on top of the vegetable mixture. Cover the skillet and let the fish cook for 8-10 minutes or until it flakes easily with a fork. Remove the fish from the skillet and set aside.
  4. In the same skillet, melt butter over medium heat. Add flour and whisk it continuously until it turns golden brown.
