Ingredients

  • 2 heads of radicchio
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 tablespoons balsamic glaze

Directions

  1. Preheat the grill to medium-high heat.
  2. Cut each radicchio head into quarters, keeping the core intact to hold the leaves together.
  3. Brush the cut sides of the radicchio with olive oil and season with salt and pepper.
  4. Place the radicchio quarters on the grill, cut side down.
  5. Grill for 4-5 minutes, until the leaves start to wilt and char marks appear.
  6. Flip the radicchio quarters and grill for an additional 4-5 minutes.
  7. Remove the grilled radicchio from the grill and transfer to a serving platter.
  8. Drizzle the balsamic glaze over the grilled radicchio.
  9. Sprinkle the crumbled feta cheese on top.
  10. Garnish with fresh parsley.
