Delicata Creamy Squash Soup

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 delicata squash, seeded and chopped
  • 3 cups vegetable broth
  • 1/2 cup coconut cream
  • 1 teaspoon dried thyme
  • 1/2 teaspoon ground nutmeg
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.
  2. Add the squash and vegetable broth, and bring to a boil. Reduce heat to low and simmer, covered, until the squash is tender, about 15 minutes.
  3. Stir in the coconut cream, thyme, and nutmeg. Simmer for an additional 5 minutes.
  4. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend until smooth.
  5. Season with salt and pepper to taste, and serve.
