Ingredients

  • 1 cup farro
  • 2 cups vegetable broth
  • 1 small zucchini, diced
  • 1 small red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup pesto
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Directions

  1. Bring the vegetable broth to a boil in a large saucepan.
  2. Add the farro, reduce the heat to medium-low, and simmer, covered, for 20 minutes.
  3. Stir in the zucchini, red onion, and cherry tomatoes. Cook for an additional 5 minutes.
  4. Stir in the pesto and season with salt and pepper to taste.
  5. Transfer to a serving bowl and garnish with fresh parsley, if desired.
