2 cups grated cheese (cheddar, jack, or a combination)

Directions
Preheat your grill to medium-high heat.
Mix the grated cheese, cooked vegetables, olive oil, chili powder, garlic powder, cumin, salt, and pepper together in a bowl.
Spread the cheese and vegetable mixture onto two of the tortillas.
Top each of the cheese and vegetable filled tortillas with the remaining two tortillas.
Carefully place the quesadillas onto the grill and cook for about 5 minutes, flipping once. The quesadillas are done when the cheese is melted and the tortillas are lightly browned.
Carefully remove the quesadillas from the grill and cut into wedges.
